L'corn salad it is a light and tasty dish, perfect for bringing a little color to the table. You can serve it as a side dish or add tuna, bresaola or mozzarella to make up a fresh and tasty single dish. This recipe is ideal for a relaxing summer lunch, also because you can prepare everything in advance and keep it in the fridge until ready to serve ... convenient, right? I started from fresh corn on the cob, because in this period they abound and are very good, but nothing prevents, for convenience, the use of precooked corn in can;)
How to make corn salad
Clean the cobs by removing the leaves and filaments.
Then put them in a large pot, cover completely with water, add salt and baking soda, turn on the heat and cook for about 1 hour starting from boiling.
Drain the cobs and brown them for a few minutes on a very hot grill pan, then shell the grains.
Season the corn with the lime juice and prepare all the other ingredients, cutting them all into small pieces after washing them.
Combine the ingredients in a salad bowl, season with salt and oil, let it rest for at least 1 hour in the fridge and then serve your corn salad.
