Shrimp Carbonara Recipe of of 04-09-2019
There shrimp carbonara it is a particular dish. For purists: yes, I know it's not a real carbonara! Rather, it is a variant of the carbonara di mare that I prepared some time ago, in any case a dish of sea and mountains, as they say. Since I had unexpectedly liked that version, I thought I'd try to make a variant and here we are. Since I had already tried the combination of shrimp and bacon, this time I went a little more without fail, and in fact I was not disappointed;)
PS: online I have seen that someone combines this dish with a final sprinkling of coffee powder instead of the more classic pepper. Frankly, I didn't feel like daring so much, but if you feel like it, try the dish with this very particular addition and let me know what you think;)
How to make prawn carbonara
Cut the bacon into strips.
Clean the prawns and cut half into small pieces.
Brown the bacon in a pan with the butter, when it is golden brown add the prawns (both whole and chopped), cook for a couple of minutes and turn off the heat.
Beat the egg yolks with cheese, salt and pepper.
Cook the pasta, drain it al dente (keep some cooking water) and sauté with the prawns for a couple of minutes, then add the eggs, stir and turn off the heat, continuing to stir. If needed, add a little cooking water.
Your prawn carbonara is ready, serve, sprinkle with a little fresh pepper and serve.
